Carrots

 Ingredients

For the Noodles:

  • 1, Cucumber
  • 2, Carrots                   
  • A can of chickpeas    
  • 1, Green bell pepper chopped small
  • 1 tsp. Sesame seeds 

For the Dressing

  • 3 tbsp., lemon juice    
  • 3 tbsp., Olive oil                     
  • 2 tbsp. Sesame seed oil                    
  • 1/4 tsp., Salt   
  • 1/2 tsp., Garlic powder                       
  • 1/2 tsp., Garlic chopped
  • 1/4 cup, Chopped cilantro     

Instructions

Step 1:

  • In a small bowl, combine all ingredients for the dressing and set aside.

Step 2:

  • Using a spiralizer, make long noodle shapes from the cucumber and carrots.

Step 3:

  • Drain and rinse the can of chickpeas and chop the green pepper into small pieces.
  • Mix cucumber and vegetable noodles with chickpeas and chopped green pepper in a bowl and pour dressing over it.
  • Toss until everything is covered
  • Garnish it with sesame seeds.
  • Cucumber Carrot Noodles are ready to serve
